View Full Version : Perch cleaning "Butterfly" fashion??

For some time now, I've been trying to find someone who can EFFICIENTLY guide me to a way to "Butterfly" clean a perch for some time.

What I mean is, the gutting and "spreading of BOTH fillets along the backbone" in a "butterfly fashion".

There was a restaurant nearby that did this type of cleaning and serving their perch for some time. No matter what size perch they had, it was done this way, with NO loss of meat/fillet!

Does ANYONE KNOW how to and I mean, "seriously" and, EFFECTIVELY perform this type of cleaning of perch to maximize the meat on even the small ones?? Is it similar to cleaning a trout?? Meaning, using the fingers to "scrape" out the guts?? Please...I'd like to maximize the catch...?

If you are talking about what I am thinking, you must follow thise steps,

there realy is no added flesh to a butterflied perch fillet, you are just getting all the skin. depending on the waters you catch the perch out of, you should not be eating the skin because of the toxins...

remove all scales from tail to head along the belly as well.
cut off the head as close to the gills as you can
start along the back bone and fillet one side all the way donw to the belly, do not cut though, then do the other side. the butterfly fillets are connected by the belly skin
remove bottom fins by cutting around themwhen the ice returns, and I can get out to catch a perch, I will make a step by step for you with pictures on how to process butterfly fillets...

you will need a cavlar glove to do it the way it is done in the resturaund, "not, the resturaund perchases the fish processed in that manner" they dont clean fish at a resturaunt,

watch in the fish markets, you can buy buterfly perch..
